Yes, I know. Making mashed potatoes from scratch is not that difficult and so much more satisfying, but I’ll be honest; I don’t make them often enough to justify buying a kilo of potatoes, half of which are going to go bad before I can use them. Plus, as has been stated before, I’m lazy.
Enter instant mash into my life. I’ve looked around and most every brand of instant mashed potato has hidden dairy, plus iffy e-numbers. Delhaize’s budget 365 brand is dairy-free, and upon checking with their customer service department, their emulsifier is plant based! So yay! Lazy instant mash comfort food is once again a posibility!
Each box contains four foil packets with 125 g of potato flakes, which makes quite a lot. I don’t tend to use a whole packet at once. You can play around with amounts of liquid to get the consistency you prefer. This is a little bland on its own, so I like to add a pinch of salt and a dollop of Alpro margarine at the end. Of course, this will never be as good as fresh mash, so if you want the focus to be on the potatoes, this is not the way to go. But as a good base for some weeknight comfort food, this product is perfect.
